ABOUT CARROW COFFEE ROASTERS
Carrow Coffee Roasters is one of Ireland’s most passionate specialty coffee roasters, rooted in a unique journey from Colombia to County Sligo. Established in 2017, Carrow Coffee brings the diverse and vibrant flavors of the Colombian coffee farms to Ireland, with a commitment to quality and a focus on sustainability at every step.
Their story began in Colombia, where the founders immersed themselves in the world of coffee, visiting farms and discovering the incredible diversity within the Arabica species. Upon returning to Ireland, they set up Carrow Coffee Roasters, creating a space to capture these unique flavors and bring them to a broader audience.
Their Roasting Philosophy
At Carrow, roasting is like being a chef: it’s about taking the best raw ingredients and carefully “cooking” them to maximize flavor. They started roasting in Colombia as a hobby, and it naturally evolved into their craft when they moved back home.
They roast on a 12kg Probat drum roaster, chosen in 2017 for its ability to deliver the complex, stable flavors they and their customers love. While newer hot air roasters are popular for their ease of use, Carrow’s Probat drum roaster allows them to achieve a depth of flavor that honors each bean’s unique qualities.

La Vega Guatemala
La Vega is a complex and rich espresso from the heart of Huehuetenango, Guatemala. Grown at an altitude of 2000 meters, this microlot is a blend of Bourbon, Maragogype, and Pache varieties, processed using the washed method. Expect notes of blackberry crumble, warming spices, and dark chocolate, perfectly suited for the colder months. The mature fruit flavors and boozy acidity round out this festive coffee, making it the ideal espresso for cozying up during the holiday season. A special thanks to Samuel Escalante of Finca La Vega for crafting such an exceptional coffee that brings warmth to your cup.

AB Kabingara Kenya
AB Kabingara is a bright and juicy Kenyan coffee that embodies the rich flavors of the Kirinyaga County. This washed coffee features vibrant notes of blackcurrant jam, citrus, and black tea, delivering a clean and crisp cup with a pronounced, refreshing acidity. Grown in the fertile volcanic soils of Mount Kenya by the Karithathi Farmers' Coop Society, this coffee offers a perfect balance of fruitiness and complexity, making it ideal for filter brewing. The light roast highlights its natural clarity and enhances its dynamic flavor profile.

Bella Vista Colombia
Bella Vista is a vibrant and fruity coffee that bursts with tropical flavors, featuring star fruit, passion fruit, and brown sugar notes. With a crisp, tangy acidity, this coffee is as refreshing as it is complex, making it the perfect choice for those who crave a bright and lively cup. Produced by Edwin Zambrano at Finca Bella Vista, the beans were fermented for 120 hours under anaerobic conditions, resulting in a fruit-forward profile that showcases the innovative processing techniques emerging from Colombia’s coffee-growing regions. A coffee that truly pushes boundaries, offering a second cup that’s just as exciting as the first.
