The Story
Ethiopia, known as the legendary birthplace of Arabica coffee, produces some of the world’s most highly respected beans, treasured for their complex citrus and floral flavor profiles. This particular coffee comes from the Shantawene community, where coffee has been grown for centuries, not as a cash crop introduced through colonization but as a deeply rooted part of daily life. The coffee plants here thrive naturally at high altitudes under warm sunshine, allowing them to grow organically without added chemicals. Ethiopia’s coffee trees are truly unique, with an estimated 10,000 to 15,000 heirloom varieties still flourishing across the country. These heirlooms are wild or genetically undefined varieties, many of which are exclusive to Ethiopia and carry the depth of its coffee culture.
This micro-lot, sourced from the Shantawene area, has been named "Odaco" after a culturally significant tree where the local Sidama community gathers to resolve conflicts. The beans are harvested by over 560 smallholder farmers and brought to Daye Bensa, a cooperative that emphasizes quality and traceability. Once the cherries arrive, they’re meticulously sorted and dried on African beds over 13-15 days, with careful rotation every 15 minutes to ensure even drying. Daye Bensa’s approach to keeping beans separated by village and maintaining detailed records showcases their commitment to preserving the unique qualities of each lot and honoring the origins of every bean.
