The Story
Edier Perdomo’s coffee is a remarkable product of the Pink Bourbon Creation project, renowned for its distinctive pink cherries and intricate flavor profile. This unique variety has garnered attention in the specialty coffee world, highlighted by its floral and complex notes of hibiscus, Appletiser, and honey. Edier has been cultivating coffee in Vereda Chillurco since 2014, growing a diverse range of varieties, including Pink Bourbon, and striving for exceptional quality.
The process begins with careful selection of ripe Pink Bourbon cherries from Edier's farms, followed by a meticulous fermentation and drying method that enhances their vibrant flavors. The semi-washed approach results in a coffee with a specialty score of 86.5, exemplifying the dedication of Colombian coffee producers to quality and sustainability.
